Gracie Carroll - Vibrant Avocado and Tuna Paleo Poke Bowl Recipe

There’s nothing I love more than a fresh and vibrant bowl of yummy food, and I (along with many others) have welcomed the Poke Bowl (it’s pronounced POH-keh, btw) food trend with open arms. The original Poke Bowl is a staple food of the Hawaiian islands, and is created by layering hot white rice with fresh and cold toppings such as raw fish, seaweed and fresh veggies.

One thing I love about Poke Bowls is that they can be customized to suit anyone’s taste, and they’re easy to make at home. Since March is Nutrition Month and I’m always looking for ways to make some of my favourite meals (even) healthier, I decided to create a Paleo Poke Bowl for a grain-free option that’s still just as yummy, if not even better.

So what does a grain-free, Paleo Poke Bowl consist of? Quite simply, an easy-to-make and fragrant Coconut Cauliflower “Rice” to replace the grain rice, that’s topped with with the remaining ingredients of your choice. Some of my personal favourites? Sushi-grade raw tuna or salmon, edamame, mango and, of course, Avocados from Mexico to compliment everything with its creamy texture and delicious flavour. Vibrant Avocado and Tuna Paleo Poke Bowl Recipe:

Coconut Cauliflower “Rice”

What You Need:

  • 1 medium cauliflower or half of large cauliflower
  • half an onion, diced
  • half cup unsweetened coconut flakes
  • 1 to 2 tbsp coconut oil
  • 1 to 2 tbsp water
  • salt and pepper to taste

What To Do:

  • Remove the stalks from the cauliflower and chop it into chunks.
  • Throw all of the pieces into a food processor and pulse until the cauliflower resembles rice. Heat the coconut oil in a frying pan.
  • If using onion, add the chopped onion to pan and sweat. Add in the cauliflower plus 1 or 2 tablespoons of water and lightly steam the cauliflower.
  • Add salt and pepper to taste, and stir in the coconut flakes until fragrant.
  • This really doesn’t take long so plan to have things cooking for no more than about 5 minutes.

Poke Bowl Ingredients

What You Need:

  • cauliflower rice with coconut
  • diced red pepper
  • diced fresh mango
  • de shelled edamame
  • diced sushi grade tuna or salmon with black sesame seeds
  • half an Avocado from Mexico, diced or sliced
  • slices of quick pickled jalapeño

What To Do:

  • Fill your single serving bowl with cauliflower “rice” and add toppings.
  • Feel free to get creative when it comes to the toppings you choose, the possibilities are endless!

Pour-Over Sauce:

What You Need:

  • 2 tbsp Tamari
  • 1 tbsp Rice wine vinegar
  • juice of 1 lime
  • 1/2 tsp agave
  • 1 tsp minced ginger

What To Do:

  • Combine everything in a glass jar and shake well to combine. Serve with your bowl!
