It might be surprising to see a banana recipe from me, but considering it’s been so hot out I just had to share this delicious summer treat, that doesn’t require any heat. To give you some context, eating bananas is not something that runs in my family, at least not on the Carroll side. Ever since I was a little kid, the texture of raw bananas has never been something I’ve been able to come to like. However, I do believe it’s possible to enjoy bananas when their raw texture cannot be detected. For example, in banana bread or even an old-school banana popsicle from the corner shop.

Last summer, everything changed when a couple of dairy-free friends of mine decided to make frozen banana pops for everyone while staying at the Carroll Cottage for a weekend. I was amazed to find that freezing bananas transforms them into a delectable ice-cream-like texture that tastes especially good when smothered in dark chocolate, obviously.

This summer I was eager to try them again, but with a bit of a twist to keep things cool in the kitchen. Evidently, the first thing I had to figure out was how to get the dark chocolate onto the banana without having to melt it first. The solution I found was to a use a yummy dark chocolate spread that could be used straight out of the jar. To take them to the next level, I sprinkled my favourite Roasted & Salted Wonderful Pistachios over the dark chocolate covered bananas to add some crunch and additional pop of flavour.

This resulted in a super easy recipe for Pistachio and Dark Chocolate Covered Banana Pops that you MUST try if you: 1. Love frozen desserts, 2. Enjoy the taste of bananas, dark chocolate and pistachios, especially all together and 3. Want an easy way to cool down after a hot day. See below for how to make them!

Pistachio and Dark Chocolate Banana Pops Recipe

(Makes 6)

What You Need:

  • 3 large yellow bananas (they still need to be firm so you can get them on a stick!)
  • 3 heaping tablespoons of a dark chocolate spread of your choice
  • 1 handful of Roasted & Salted Wonderful Pistachios
  • 6 popsicle sticks

What to Do:

  • Peel each banana and cut them in half
  • Put a popsicle stick through banana from the bottom until just before the tip.
  • Place all 6 bananas with their sticks inserted onto a baking sheet lined with parchment paper and place in the freezer for 20 minutes.
  • While your bananas are in the freezer, shell the pistachios and then crush them with the side of a chopping knife.
  • Scoop the dark chocolate spread into a bowl, and give it a good mix with a spoon to smooth it out if needed.
  • After 20 minutes, remove the bananas from the freezer.
  • One by one, take a banana and cover it completely with the dark chocolate spread using a spoon.
  • Once covered, sprinkle with crushed pistachios and place back on the parchment paper-lined baking sheet.
  • When all 6 bananas are ready, place them back in the freezer for an additional 30 minutes to set.
  • After that, serve and enjoy!
