One of the things I love most about travelling is getting to try different foods in cities around the world that inspire me when I’m back in the kitchen at home. On my recent visit to Barcelona, I fell in love with a tiny little bar called El Bitxo, that was around the corner from my hotel. Although their kitchen is no bigger than a tiny cubby hole (I’m totally serious), they serve some of the most amazing tapas I’ve ever had.

Although their menu is small and limited (as you can imagine, considering their set up) they are best known for their smoked salmon that’s cured in coffee, cod fish cured in Earl Grey tea, and the most delectable tarragon tuna salad I’ve ever had.

As soon as I got back home to Toronto, I immediately set to work doing my best to re-create their tuna salad. Although my version isn’t an exact replica, it’s delicious and far healthier with significantly less mayonnaise, in fact, I use only a couple spoonfuls of an eggless and vegan version. My Tablespoon Tarragon Tuna Salad Recipe

Makes 1 serving for 1-2 people

What You Need:

  • 1 Can Solid Tuna in Water
  • 2 Tbsp Minced Onion
  • 2 Tbsp Olive Oil
  • 1/4 Tsp Sea Salt
  • Fresh Ground Pepper
  • 2 Tbsp Capers
  • 2 Tbsp Minced Fennel
  • 1 Tbsp Minced Tarragon
  • 1 Tsp Fresh Lemon Juice
  • 2 Heaping Tbsp Veganaise
  • 1 Super Seedy & Quinoa Harvest Bakes flat bread

What To Do:

  • Gently flake the solid tuna with a fork in a medium sized bowl
  • Next, add all over ingredients and mix together until well combined
  • To serve, slice the Super Seedy & Quinoa Harvest Bakes flat bread in half and toast for a ‘Skinny Sandwich’ option that’s great with a layer of thinly sliced cucumber and arugula. You can also add a slather of dijon mustard to your bread if you wish!
  • For a shareable option that’s great when you’ve got guests over, slice the flat bread into small rectangles and toast before serving the Tarragon Tuna Salad on the side.
