Whether the guest list is big or small, there’s nothing I love more than hosting my friends and family in my home. Of course, being the foodie that I am, having a great menu is always an important part of the planning. However, I often have to remind myself that not every meal has to be an extravagant ordeal that involves blood, sweat and a lot of tears on my part, in fact, simple meals that are far less stressful to make can be just as delightful for everyone.

With the lovely spring weather on its way, I’ve been so inspired to create light and colourful dishes that reflect the bright weather to come after a dark winter. Working in partnership with Wonderful Pistachios I’ve created 3 easy and delicious pistachio recipes for a healthy dinner at home for you to enjoy with your #squad.

To be honest, I’ve always loved the yummy (and addictive!) taste of pistachios, not to mention the health benefits of this all-natural snack, but, I’ve rarely used it as an ingredient for cooking. Creating a meal with Wonderful Pistachios was such a fun challenge and I was surprised to find that pistachios can be a very versatile ingredient that not only adds great flavour but a fabulous vibrant colour to your meal.

If you’re interested in trying out some pistachio recipes too, here are 3 easy recipes that will help you create a complete meal for you and your guests in no time. The best part? All you need is one bag of Roasted Unsalted Pistachios from Wonderful Pistachios to get you through all 3 dishes!

Goat Cheese Rolled In Roasted Pistachios

What You Need:

  • 1 small packet of goat cheese
  • 10-15 Roasted & Salted Wonderful Pistachios®
  • Prosciutto to serve (optional)
  • Rustic olive bread to serve (optional)

What To Do:

  • Unshell the pistachios and place on a cutting board.
  • Carefully crush the pistachios using a kitchen knife.
  • Remove the goat cheese from the package and gently roll it in the crushed pistachios.
  • Spread a small amount of the crushed pistachios on your serving platter or board.
  • Place the pistachio covered goat cheese on top and complete your platter with the remaining ingredients of your choice.

Beet Salad with Ginger Dressing, Pistachios and Avocado.

What You Need:

  • 6 small beets, scrubbed
  • 1 ripe avocado, diced
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp finally grated peeled fresh ginger
  • 1/2 cup shelled Roasted and Salted Wonderful Pistachios®, chopped
  • Coarse sea salt and freshly ground pepper

What To Do:

  • Preheat your oven to 425F°
  • Wrap your scrubbed beets in parchment paper, then foil, and place them on a rimmed baking sheet.
  • Roast them until they’re knife tender, about 45 minutes to 1 hour.
  • When cool enough to handle, cut the beets in to 3/4 inch wedges.
  • In a large serving bowl, whisk together the oil, vinegar, and ginger before season with the salt and pepper.
  • Toss the beets in the dressing, before carefully adding the chopped avocado and sprinkling with chopped pistachios.
  • Serve and enjoy!

Vegan Leek and Broccoli Soup with Pistachios

What You Need:

  • 1 tbsp organic coconut oil
  • 1 small sweet onion or 1/2 of a large, roughly chopped
  • 2 large garlic cloves of 4 small/med, roughly chopped
  • 1 potato, roughly chopped
  • 1 medium leek, roughly chopped
  • 1 bunch broccoli, roughly chopped
  • 3-4 cups of homemade veggie stock (or chicken stock, if not vegan)
  • 1 tbsp raw apple cider vinegar
  • 2 tbsp quality natural honey
  • 1/2 cup shelled Roasted and Salted Wonderful Pistachios®
  • Salt & pepper to taste
  • Chopped roasted pistachios to garnish
  • Chili flakes to garnish, optional
  • Crumbled feta cheese to garnish, optional if vegan.

What To Do:

  • Heat the coconut oil in a large pot over medium heat before adding in the onions and garlic.
  • Sauté the onions and garlic for a minute before adding in the chopped potatoes. After a few minutes add in the leeks, and then the broccoli.
  • Cook the vegetables all together for a few minutes before pouring in your stock of choice.
  • Cook until the vegetables have softened (especially the potatoes!) then throw in the roasted pistachios before using a hand blender to create smooth and creamy soup consistency.
  • Once blended, add the apple cider vinegar, honey and stir. Add salt and pepper to taste.
  • Garnish the soup in the pot if serving family style or each individual bowl, with chopped pistachios, chili flakes and feta cheese.
  • Serve to friends and family and enjoy!
